Organic sparkling from Osthofen
Strauch is Germany’s only certified-organic sparkling-wine manufactory.
In the wine town of Osthofen, in the Wonnegau in southern Rheinhessen, the Strauch family farms around 25 hectares — fully organic and vegan. The family’s Dalbergerhof estate dates back to 1545.
The manufactory is among Germany’s smallest and most modern, working with French champagne-cellar equipment and traditional bottle fermentation — and has become a reference for alcohol-free sparkling.
History
From 1979 to a modern manufactory
The first Strauch sparkling wines were made in 1979 by traditional bottle fermentation. The decisive turn came in 2011, when Isabel Strauch-Weißbach and Tim Weißbach transformed the cellar into Germany’s smallest and most modern sparkling manufactory. The vineyards have been farmed organically since 2003.

The Winemakers
Isabel Strauch-Weißbach & Tim Weißbach
Both born in Rheinhessen, Isabel and Tim have run the manufactory since 2011 with equal parts conviction and energy — the love of sparkling was already there, thanks to Isabel’s parents and the Dalbergerhof estate.
Organic by conviction — and uncompromisingly handcrafted.
Terroir
Organic vines in the Wonnegau
The vines grow in the Wonnegau, the gently rolling south of Rheinhessen, on sites such as the Mettenheimer Michelsberg. Farmed organically since 2003 — cover crops, restrained yields and healthy soils give the base wines their freshness.
The Craft
How the alcohol-free sparkling is made
It starts with a real organic base wine from traditional bottle fermentation.
Organic base wine
Handcrafted sparkling from 100% of the estate’s own organically grown base wines.
Vacuum de-alcoholisation
Gently warmed to ~30 °C under reduced pressure to below 0.5% vol — the aromatics stay protected.
The bead
Instead of a second fermentation, fermentation-derived CO₂ gives the fine, fresh bead.
At the Table
How to serve it
An alcohol-free sparkling is, first of all, a wonderful aperitif. The Blanc Pur shines with oysters, sushi and light starters; the Rosé Pur loves brunch, summer salads and berry desserts.

Strauch is Germany’s only certified-organic sparkling manufactory (DE-ÖKO-022), organic and vegan since 2003, supported by the EU for organic agriculture and biodiversity.
